I love a great tasting low carb soup recipe. Soups are great because 1) you can usually throw all the ingredients together
into one pot 2) they don't require a lot of attention while cooking, and 3) they provide sustenance for a full meal.
Soup is an easy way to enjoy several good foods at once. Using a great tasting low carb soup recipe and cooking foods
together develops and changes their flavors.
Soup is easy to cook, and while it's cooking, the aroma gives a home that
rich, traditional feel that makes everyone feel good.
Unfortunately, alot of people think of soup as something that comes out of a can or a small box. Most canned soup have
added corn starch or corn syrup and other high carb ingredients like rice, potatoes, and beans.
Therefore, it makes sense to use a great tasting low carb soup recipe and make your own. You can make a soup as an
appetizer or snack or you can make a soup for lunch or supper. Just remember that if you want to use a low carb soup
recipe as lunch or a dinner, keep an eye on the protein content, and figure that the vegetables in the soup will be
all your carbs for that meal.
Boullion cubes, dry soup mixes, and prepared foods all contain sodium - sometime quite a bit. Be sure to read the labels

To simmer is to keep a liquid just below boiling point. When simmering soup, remember to stir occasionally; since this
will ensure that your soup doesn't stick to the saucepan.

Making soup requires little equipment. To start you need a large saucepan with a lid, sharp chef's and paring knives, a
vegetable peeler, scissors, measuring cups and spoons, a large chopping board, a spoon with a long handle, and sieve and
soup ladle.

To puree soup you need a blender or food processor. A great tool to have is a hand blender that you can use right in
your saucepan when puree soups, saving time and most likely, a mess. Blend just until the soup is smooth.

When reheating pureed soup use low heat and stir frequently so your soup does not stick to the bottom of your saucepan.

Mushrooms won't go slimy if you keep them stored in a paper bag in the vegetable crisper. When cleaning, wipe them with
a damp paper towel or briefly rinse them under cool running water but never soak them. They'll absorb too much water, which
will dilute some flavor.

If you are going to use hot peppers as a spice, protect your skin from the heat. Be sure not to touch your face or eyes and
immediately after handling hot peppers wash your hands thorougly.

Soup is alot like fine wine, it gets better with age (well, up to a certain age anyway). Most soups can be prepared days
ahead of time, refrigerated and reheated whenever you feel like a bowl. The ingredients and the broth blends and marinates
together to create even more flavor.

Cream of Spinach
4 scallions, trimmed and chopped
4 tbsp of butter
2 garlic cloves - minced
4 cups low sodium chicken broth
3/4 to 1 pound of fresh spinach
1/2 cup cream
Dash of sugar or sugar substitute
Dash of nutmeg
Dash of salt and pepper
Melt the butter in a pot and add the scallions and garlic. Cover and cook over low to medium heat for a couple of minutes
until the vegetables turn a golden color. Add the chicken broth and the spinach, bring to a boil and then lower the heat
to a simmer. Cook for about 10 to 15 minutes or until the spinach is done.
Blend the soup to a puree or use a hand blender right in the pot. About 8 to 10 minutes before serving, add the cream, nutmeg,
and sugar and heat through. If you find the soup is a little thin, add a pinch of flour and cook several minutes longer. Add
salt and pepper to taste.

Beef and tomato soup
1 can diced tomatoes
2 cans low sodium beef broth
1/2 to 1 1/2 pound ground beef
salt and pepper
In a medium sized skillet, brown the ground beef and pour off the grease. Add the beef broth and tomatoes. Heat through
and serve.
