Low carb lunch recipe #1

Tuna salad

3 ounces tuna packed in water- drained
1/4 cup celery- washed and chopped
1/2 cup blueberries
1/2 cantaloupe- seeds scouped out
1 tblsp olive oil
1 or 2 lettuce leaves

Mix tuna with celery and stir in dressing. Prepare a bed of lettuce leaves and top with tuna mixture. Stuff cataloupe with berries and have for desert.

Grilled chicken salad

4 ounces of precooked skinless chicken breasts, sliced into bite sized chunks
2 cups romaine lettuce - wash, dried and torn into large chunks
1 tblsp lemon juice
1 tblsp Worcestershire sauce
1 medium tomato- sliced
1 cup broccoli florets
1/2 green pepper - cored, seeded and sliced into thin strips
1/4 cup canned kidney beans, rinsed and drained 3 tsp olive oil and vinegar dressing (1 tsp olive oil and 2 tsp vinegar) 1/2 tsp ground pepper

Toss lettuce with broccoli, green pepper, kidney beans, and tomato. Combine dressing with lemon juice, Worcestershire sauce, and pepper. Toss with vegetables until well combined, and top with chicken.

Tex mex beef stir fry

1 1/3 tsp olive oil
1 ounce cheddar cheese (taco cheese optional)
3 ounces of lean beef, sliced
1 1/2 cup tomatoes, chopped
1/2 cup salsa -mild, medium or hot
1/4 cup black beans
2 cups red pepper- chopped into thin strips
1/2 tsp garlic - minced
1 tsp chili powder
red pepper powder

In a nonstick pan heat oil over medium heat. Add beef and saute for about 3 to 5 minutes. Stir in tomatoes, salsa, black beans, peppers, chili powder, garlic, and red pepper powder. Simmer until vegetables are tender, about 4 or 5 minutes. Spoon into a serving bowl and top with cheese.

Chicken roll ups

3 ounces of precooked skinless chicken breasts, sliced into bite sized chunks
1 1/2 tblsp mayonnaise
1 small tortilla
dash of lemon juice
1 ounce cheddar cheese- grated
1/4 cup red pepper
3 tblsp tomato chunks
1/4 cup romaine lettuce leaves

Spread mayonnaise over tortillas. Spread a layer of chicken over tortillas. Drizzle with a little lemon juice. Top with cheese and red pepper, tomatoes, and lettuce leaves. Sprinkle with black pepper. Roll up, jelly roll fashion and secure with a wooden pick if necessary.

Stir fry chicken

1 1/3 tsp olive oil
1/2 cups scallions or green onions, sliced
4 ounces of chicken tenderloin
6 cups of spinach
1/4 cup kidney beans
2 cups mushrooms- sliced
1 1/2 cup snow peas
1 1/2 cup bean sprouts
1/2 cup chicken stock (or broth)
2 tsp soy sauce
1 tsp cider vinegar

Using a nonstick pan, stir fry the chicken in hot chicken stock for 2 minutes. Add mushrooms and cook for about 3 to 5 mintues. Stir in kidney beans, snow peas, sprouts, and scallions. Cook for about 2 additional minutes. In a small bowl mix oil, soy sauce, and vinegar. Whisk to blend. In a salad bowl combine spinach, chicken and vegetables (use slotted spoon to remove from saute pan.) Pour dressing over salad and toss to coat.
