A low carb dessert recipe

I'm caught in the middle when it comes to a tasty low carb desert recipe. On the one hand, I love deserts since they
taste so good and they help me keep my sanity with a low carb diet.
I totally understand the lure of sweets, especially
the lovely taste of a nice peice of cherry cheesecake.
On the other hand, I think it's a bad idea to get into the habit of eating a low carb desset with every meal. However,
I do feel that it is necessary to indulge in sugar free desserts every once in awhile to keep your sanity. If you're
fighting sever sugar cravings or if you're subject to frequent temptation, keep a low carb dessert recipe handy. The low
carb dessert recipe at the end of this page is tasty and should help to satisfy your taste buds. The great thing about
the low carb dessert recipe is that they won't cause the blood sugar rush that goes hand in hand with regular sugar.
I suggest you slowly ween yourself off the desserts and use them as a specialty food that can be used as an occasional
treat.
Traditional desserts are usually in calories and loaded with carbohydrates and fats. You can, however, limit the amount
of calories and carbohydrates in each low carb dessert recipe by substituting some of the main ingredients with low or
non carbohydrate mixes. The bulk of most traditional desserts are made from flour and sugar. You can easily
substitute these ingredients by using a variety of low carb ingredients. However, there are low carb bake mixes
on the market that can be purchased at most health food stores. The low carb bake mixes generally use a combination of
powdered protein and fiber usually coming from sources such as soy proteins, whey proteins, oat protein, wheat protein,
fiber, and sometimes baking powder.
The ingredients found in low carb bake mixes don't have any shortening or other nutritionally void ingredients. You
can generally find low carb bake mixes at your local health food store and there are some great websites designed for low
carb dieters. I've recently come across a website from BodyTrends.com that has an online low carb store that sells
alot of bake mixes. There is one particular product called "zero carb baking mix" from Carb Sense that looks great.
You can use bake mixes for a low carb dessert recipes or in lesser quantities such as flouring chicken before baking or
frying.
Most sweetners can be found at your local super market or health food store. I suggest you try and find either
Splenda or Stevia for your sweetener. Splenda is my first choice since it measure just like sugar. If a a low carb
dessert recipe calls for 2 tbsp of sugar, you don't have to guess when using Splenda. It also tastes just like sugar.
However, Splenda uses maltodextrin as one of it's ingredients. It has about .5 grams of carbodydrates per teaspoon and
about 1/8 the carbohydrates of sugar. I suggest you count half a gram per teaspoon.
Generally, butter can be used in a low carb desset recipe. Since butter has no carbohydrates, it can be used in
virtually all of your low carb dessert recipes. However, butter has alot of calories and I suggest that you use
it sparingly.
Low carb dessert recipe #1
Peanut Butter Cookies
1 tsp baking powder
1/2 cup peanut butter
2 tbsp soy flour
4 packs sugar substitute
2 tsp vanilla
1/2 cup chopped pecans
3/4 cup cream
Pre heat oven to 375 degrees F. Spray a cookie sheet with non stick oil substitute. Mix all ingredients in a mixing bowl
and blend well. Drop on cookie sheets by teaspoons and bake for about 10 to 12 minutes.

Chocolate Fudge
3 tbsp sugar free peanut butter
4 packs sugar substitute
1/2 cup cream
1 tbsp creme de cacao
1 pack of sugar free instant jello pudding
Mix all ingredients together except peanut butter. Place over low heat and add peanut butter. Heat the mixture until
peanut butter melts. Stir until well blended. Spray a small baking pan with oil substitute. Spoon mixture into pan.
Refridgerate until firm. Slice into small squares.
Low carb dessert recipe #3
Chocolate Peanut Butter Cookies
1/2 tsp chocolate extract
3/4 cup soy flour
1 tsp vanilla extract
1/2 cup cream
1 tsp melted butter
1 egg
2 tsp cocoa
1 1/2 tsp baking powder
4 packs of sugar substitute
1/3 cup peanut butter
Preheat oven to 375 degrees.
Add dry ingredients to a meduim size bowl and sift. Combine peanut butter with remaining ingredients and add to flour
mixture. Stir until blended. Using a teaspoon, dip into mixture and drop a small ball onto greased cookie sheet. Bake for
10 to 12 minutes or until golden brown.
Low carb dessert #4
Blueberrie Custard
2 tsp sugar
1/2 cup blueberries
2 eggs
2 cups milk
1/8 tsp vanilla
Beat eggs until they are light and fluffy. Add eggs, vanilla, milk, and sugar in a nonstick skillet of saucepan. Heat
mixture to a simmer. Pour mixture into 4 serving dishes and put into refridgerator to cool. After mixture has cooled
for 20 to 30 minutes, add blueberries to each mixture evenly. Return to refridgerator and cool. Serve when custard has
set.
Low carb dessert #5
Mousse
1 cup whipping cream
1 1/3 ounce sugar free chocolate pudding mix
1 package of tofu - 8 to 10 ounces, drained
1 teaspoon unsweetened cocao powder
1/4 teaspoon instant coffe granules
Using an electric beater, mix everything but the cream together until smooth. In a seperate bowl, beat the cream until
it's somewhat stiff. Turn to mixer to low and add the chocolate mixture and combine. Be careful not to beat too much.
Spoon the mouse onto dessert dishes.
Serves about 2 to 3.
